Sourcing fruit is its own discipline. We work with growers we know, picking at the moment we think is right — which is a moving target that changes every year. The truck bed is a useful proxy for ambition.

Still and sparkling wines in progress, in carboys, in barrels — each one labeled, monitored, and periodically argued over. The work between harvest and bottle is mostly waiting, interrupted by decisions you won't know were right for another year.

An engineer's approach to something that resists engineering.

We measure pH, track Brix, log temperatures. We also know that the numbers tell you what happened — not what to do next. The craft is in the gap between data and judgment. We're still learning to close it.
